traditional scottish shortbread

ingredients
12 oz
s  plain flour
4 ozs   cornflour
4 ozs   caster sugar
8 ozs   butter

modern options - flavour with 1/4 teaspoon cardamom, lemon zest or freshly ground black pepper

method

Preheat oven to 375 degrees.

Sift flourstogether. Rub all ingredients together until well combined.

To prepare mould - oil with mild cooking oil, sprinkle mould with flour & caster sugar.

Roll a quantity of the mixture into the mould. Bake approx 30 -35 minutes in a moderate oven - 180. Turn out onto a flat baking slide. Leave on slide until cool.

Alternatively press a 1/2 tablesoon mixture into mini muffin tins and bake approx. 15 minutes - until pale golden. Turn out gently, dust with icing sugar.
